I would buy it on Xbox with that setup. Though both options seems equally good, seeing you have a proper gaming PC (assumption).
You can also play on gamepad on PC.
How about buying it on PC and give it a whirl within the two hours refund policy of Steam or 30 days refund policy of GOG.com?
You can still switch to XBox if you prefer playing it on the big screen after all.
I have played the game on gamepad as well, mostly for troubleshooting reasons.
While your worries are warranted to a certain degree, there is not much to worry about in truth.
In fact, playing the game in gamepad mode gives often a much better feeling of the game than playing with mouse and keyboard --- surprisingly!
By the end of the day I would even say it is a matter of personal taste. That is mostly due how the game is designed. For example games like FFXIV are greatly designed for Playstation and have therefore great gamepad support. So is Baldur's Gate 3. While other games, mostly FPS, are better played with mouse and keyboard, especially in competitive modes.
It is also thanks to one of the major features that gamepad mode in Baldur's Gate 3 feels so good. Which is turn based combat and turn based exploration mode. That makes the game immensly approachable and a great couch game where you can take a break at your leisure.

but that I cannot tell as I cannot test. Personally, if it is possible, I would go the path "connect PC somehow with TV" to enjoy it fullest without losing anything out. But buying the game for console is in my opinion no mistake either.
I very much prefer the PC version because the UI is significantly better but the Xbox version is still a great game. It just takes longer than I would like to set up my ability wheels.
