I also find playing only classes and subclasses you have not yet tried to make it feel very fresh
There's some interesting things out there that require script extender, can't use them, those can really change some things, perhaps in ways that are very, well, "cheatey". They literally can change the flow of events in the game. But then if you really want to change things up ....
It's really hard to answer at that level. I can tell you class and subclass mods I've tried and liked, done it in other threads. I have yet to play a tav with a custom class, I usually just try them out on hirelings. Artificer is probably the most lore friendly, and fully fleshed out. I found I liked the Artillerist best.
In general, I agree with a poster who said earlier is decide what you're looking for, and sort the mod list by category. at Nexus. Are you looking for new spells? New classes? Etc. They're sorted that way. And then decide if you want to go by popularity and recommendations and # of downloads, often an insight into quality and whether they may just be bugged or conflicting with other stuff.
Sorting by date can be relevant too. In general, the more recently the mod was put up there, or at least updated, the more likely it does not conflict with the most recent patches and hotfixes. Anything that looks like it was put up in August and abandoned is probably not safe to use.

And yeah, I try to do that consistently. My next playthrough I plan a college of lore bard teamed up with bardlock Wyll, wildmagic barb Karlach, and I've yet to decide what Lae'zel shall do

I'm not using them. They exist.
A lot of stuff I'm using is admittedly, as they say, "unbalanced" or "OP." Don't care, of course, but I get that matters to other people.
The game is balanced for a level 12 party (at most) with 4 party members. But then, if you want to, you can make things harder for a party of 6 with levels higher than that.
Dunno if that's true for a party of 15 who are level 240. There's everything there, including the obligatory god mode mods. I may not be very concerned about balance, but I want SOME challenge.
I haven’t tried it yet (it’s new) but it adds all the extra voice line content that you only get if you play one of the companions instead of a custom character. So lots of new and interesting comments as you go through the game. It doesn’t mesh well with durge though and I’m trying a durge run for the first time so I’ll have to wait to try it
Bardlock and wm barb are both on my hitlist for next time as well, they sound fun. Right now I’ve got shart as a sorc which damn sorcs are op, lae’zel as a tempest cleric, wyll as an eldritch knight, and me as a dual wield rogue with a few fighter levels. It’s very interesting. Also i am romancing lae’zel for the first time because i used appearance edit to make her attractive, and it’s been a wild ride so far lmao
Does it use AI, or just cut lines? I really don't like the concept of using AI mods in my own playthroughs unless certain conditions are met
Oh that party sounds fun as hell. My current party is my paladin, Shart as a war cleric (mace and board frontliner), minthara as a general ragebarian, and Ass as a rougeswordbard
Yeah I remember you talking about that. No as far as I know it just implements voice lines that you would never know existed unless you play an origin character as your main
I still have to try out minthara. I knocked her out this run, maybe I’ll be able to recruit her
Last time I checked there were some that attempted to make tbe game closer to 5e RAW by removing some of Larian's homebruh. That definitely makes the game more xhallenging, but I didn't try them.
a) add additional enemies
b) make enemies stronger
c) make enemies smarter (i.e. improve their AI)
d) make encounters more difficult in other ways
There's even one that lets you configure your enemies.
