So, there is no reason not to Long Rest during the game unless a quest has specifically indicated that time is important.
And yes, you can be unable to do some lines of content based on actions (or inactions in this case) taken during the game. That is what makes this game a masterpiece. Player actions can directly impact the flow and narrative of the game. :)

Don't Sweat The Small Stuff
I barely have time to finish this game once, I’ve had it since release 😅
But it’s already ruined all other games for me because it’s so good 😭😭😭
I would not worry about 'missing' out on any content. It is not possible to see ALL the content in the game in a single play through as a lot of the content is mutually exclusive with each other.
BG3 can be quite enjoyable in smaller chunks rather than long play through sessions. That makes doing additional runs a lot of fun and nowhere near as stressful. :)
*Laughs* I feel your pain. But really, there are no 'wrong' decisions. The decisions you make in the game may not have the outcome anticipated, but that is what makes BG3 unique among CRPGs. Just go with it and see where it leads and have fun with it. :)
