So only good thing for Monk Barb is just the Finesse weaponry for Greataxes and dumping Strength?
Yes, versatile weapons are the highest damage dice weapons that Monks can wield. You can use Longswords as a Monk Weapon, either from racial proficiency(Elves, Gith,etc) or from multiclass weapons proficiency(Barbarian, etc), so that should be the best damage die you can get.
Monks using weapons are generally less optimal, since Open Hand strength Monk with Tavern Brawler is the best. But I do love playing as a Shadow Monk with a spear or longsword(or even dual wield, Act 2 has good crit weapons for off-hand, if you want to use a feat to dual wield non-light weapons), fun assassin class.
What? How do you imagine that multiclass like that?
If you download the Bladesinger mod and play as a Bladesinger/Barbarian or Bladesinger/Monk (I would choose Monk since Rage interferes with spellcasting) you CAN add your Int modifier on top of UD, potentislly getting an AC of 25 naked if you somehow maxed out all three ability scores.
