What weapon combination seems better for Astarion?
I'm using Astarion as a duel wielding melee fighter and I'm currently debating between two short swords and a dagger, specifically . . .

Steelforged: Nothing special just a +1 weapon.
Bloodsword of first hit: Adds 1d8 damage when hitting an enemy at full health but isn't +1 so lower to hit/damage normally than steelforged.
Sussur dagger: +1 and silence on hit.

Weapon damage respectively is 1d6 + 4, 1d6 + 3/+1d8 if full health and 1d4 + 4. I was using the two short swords but I'm thinking of swapping the bloodsword out for the dagger. It only adds 1d8 if an enemies at full health so the +1 damage of the steelforged sword seems more generally useful. Especially as Astarion has to get the first hit in to get any benefit from it and the silence on the Sussur dagger while not generally useful isn't a bad ability.

What combination of weapons would people say is a good choice? Bearing in mind I'll probably find better soon enough this is just for now.

What level? Astarion, the Rogue-Assassin, will pull a major hurt on everyone - nothing else matters.

Currently level 5, 3 thief, 2 ranger heading to gloom stalker.

Probably best to go 5 gloom first so you get your secondary attack asap. Level 5 is usually a pretty big bump in power for martial classes.

Not a weapon, but Risky Ring is essential, as it gives you advantage in any circumstances.

Trying to avoid respecing as I'm aiming for the all classes in one playthrough achievement. Risky ring is aways off still exploring the underdark then have to do the mountain pass.

Depending on what he does on the quests, he will either be a swashbuckler or an arcane trickster

Does it matter for Astarion though? Since he's already 3/2?

Thought the achievement was for 1 character doing 1>12 with all different classes without respecing, don't know if you're not allowed to respec other chars

You won't. I did it on a hireling once I reached lvl 12, respecced basically everyone at least once before that.

The Sussur dagger is pretty great, btw. It's usually not that much more useful than a regular +1 dagger, that's true, but once you have to fight a potent magic user (like Balthazar, for example) it's a godssent. So just have Astarion keep it in his inventory and switch it out before the fight; switching during the fight uses an action, which is fair, but very annoying.

He's also the only origin character thief so for a decent lock picking option I'm stuck with him.

Interesting, I'll keep that in mind if necessary but I'll still try to avoid respeccing unless I must.
Shush-Shush dagger is one of the best weapons in the game, keep using it.

You don't need a thief in the party for Act 1. A high dexterity character will work, or a githyanki character with their racial ability. The odd thing about DND thieves is that they're not even good at detecting traps because Perception is based on the Wisdom stat.
