He's right. If you kill the Hobgoblin Leader the whole camp is after you.
Minthara Recruiting is buggy right now - the only way to recruiting her without burning down the Grove is as follow: Enter Temple of Selune -> Go to Minthara (DO NOT SPEAK TO HER) -> Steal Map/Scroll -> Engage in Combat and activate Non-Lethal Attacks -> Knock her out.
Every other Cult Leader can be killed. If you wanna check if it was done right, you can do a long rest and if you go back to Minthara she should be conscious and again with full HP, to finish the Quest you will have to repeat above mentioned steps - keep that in mind!
Long story short: yes

you can attack her directly instead stealing this and that to set her up - as long as she is temporarily hostile, it fulfills one of the conditions to recruit her.
General tip for the uncertain/impatient: head directly after the party to Moonrise Tower as quick as possible to check for her. That can be a matter of less than 5~10 minutes. Then you can reload the save after the party and continue as usual after that. And... when you loot her empty while she is unconcious, mind that the seen at Moonrise Tower becomes funny NSFW.
I do have good news. "Sheepthara' method still works. I can only point out it's trickier to do than the way many online guides describe it. You have to execute the steps very carefully. If you don't know what i'm talking about, well, google is your friend. Just realize it's a bit harder to pull off than many of those guides suggest. However, you have to do the hack/exploit before entering the Moonrise throne room.
As in, if you were to recruit her the normal way (or just leave the situation unresolved), would you notice any difference in her scenes?
No.
She has had about as many interesting things to say as any of my other companions. That is, if she is in my party she will make comments, and if I talk to her in camp after certain story events she will comment on them. Same as the others.
My favorite bit of Minthara dialog was when Iwas able to ask her opinion of all my other companions, and she had some interesting stuff to say about each of them. That happened soon after recruiting her, in Act 2.
Then I left and lured Gut to her room, took her out. Saved Dror for last. I didn't long rest in between. I went and got Halsin last and left to do the celebration party.
I am in Act 2 and she was there in the throne room like she should be. I did loot everything off her body, so that didn't seem to make any difference in whether or not she appears in Act 2 or not.
Then I attacked the scrying eye. Minthara went "temp hostile". I knocked her out and killed her gobbo pals.
Then I dropped a save and long-rested. However, after hearing reports that long-resting was a bad idea, I went back to the save before I long-rested and killed Dror. Then told Halsin. Then teleported to the grove. Then collected my rewards and attended the party.
When I got to Act 2 -- there was Minthara, on trial. Recruitment went fine, and she was in my camp after that. Shared a tent with Halsin until Halsin got himself kidnapped by Orin. No big loss there, IMO -- Orin can keep him.
