Throwing weapon character build advice.
Aside from following a min maxed build (god i don't want to do that as it kills all the fun at the beginning and i have found one that's all about maximising the amount of attacks you can do via throwing weapons.) how would folks go about making a character focused on throwing weapons? I know Barbarian is the preferred first class to go with.

I did a respec on Jaheira of 5 barbarian/ 4 rogue/ 2 fighter. With the gloves, hat and ring of flinging plus Nyrulna and Viconia's Walking Fortress she is the new star of the show.

Barbarian berserker for enraged throw. All throwing enhancing gear and oc tavern brawler plus hillgiant elixir and haste. Take duergar for being able to cast enlarge on yourself without having to concentrate, this gives an additional damage boost and allows you to throw medium sized creatures like humans for extra fun. Enjoy being op.

Eldritch Knight. Make sure you invest enough in Fighter to be an Eldritch Knight. And not just for Action Surge. While the game does have items that are SUPPOSE to return to you when being thrown, they don't always. Eldritch Knight's weapon binding never fails to return the weapon, and allows you to use all throwing weapons this way.

Besides that, if you really want to min/max it, go Dwarf, as that gives you the strongest throwing weapon in the game.

You can use disguise self scrolls or kit into a dwarf to get the extra bonus.

Dwarves are counted as medium size, so the enlarge makes them a large size? That makes sense, not sure about the elixir or haste.

Eldritch knight has weapon binding? I thought bound weapons couldn't be thrown of is that only pact of the blade warlocks?

That's just Pact of the Blade binding. Eldritch Knight's binding allows weapons to be thrown, and will return it to your hand afterwards.

The hgillgiant elixir is not really needed since you´ll invest into strength anyway to get the most out of your throwing build. Haste can be casted by Gale and if you respec him to a sorcerer he can even cast hast on two companions instead of just on one.

And we'd want haste because? (i do apologise i generally don't have casters outside of shadowheart in my parties)

Haste doubles your actions per turn. And gives other benefits.

With Action Surge, you could attack 6 times in one turn, and really unleash a throwing weapon beatdown.

Well, you don't have to use Gale if you don't want to. You can reclass anybody to be a Sorcerer. It can be Shadowheart or Wyll, if you want to stick to companions who are casters for the role. But you could even respec Lae'zel or Karlach into Sorcerers if you want to.

I really wish we had a party of 5. Because i normally take ShadowHeart, Vamp and Karlach. Healer, lockpicking/disarming and single damage god and a meatbag to take damage and attention.

You don´t need a dedicated lockpicker/disarmer in this game. You´ll be fine without one. Rather take a sorcerer (doesn´t have to be Gale) for x2 haste because it makes your fighters/barbarians op.
