Unlike the tabletop, wizards can cast the full caster level "ESL" i.e. you have 11 levels in sorcerer and 1 in wizard, you can cast a level 6 wizard spell which uses intelligence for those specifically learned spells
Same with any spells you learn when you level up Sorc. Those will casted from Charisma.
If you cast that same learned spell from a scroll it will use CHA. All scroll and item spells will use the last lvl 1 which in this case will be CHA. So you learn eyebite as a wizard. If youc ast it from your spell list it will use INT, from a scroll it will use CHA.
I know, and I felt that way too, at first. However, someone elsewhere explained it as giving up a feat for class features and possibly proficiencies. In this case, I'm giving up a feat and an extra prepared spell for Tides of Chaos, Wild Magic, and four extra cantrips. In a way, taking one level of Sorcerer can be seen as taking a feat that unlocks a few class features. Not to mention I'm still able to max out my casting stat as long as I take Ethel's hair and an ASI.
