Karlach is well meaning golden retriever of a barbarian. She's out to live and do something with herself. Even not romancing her I loved getting to talk with her and help her out. I've not romanced her yet but I know someone who has. If you like what she puts forward when you meet her then you will like her.
As for my top pick, Astarion. Of course he pulls off an aesthetic that I have enjoyed in characters before but he also gets a great story arch. One that can reaffirm where he's gotten to or let him grow. While you can see that without romancing him his romance lets you behind the curtain even more. It's interesting watching the evolution of his feelings and intentions.
"to pure for this world" (while I guess Wyll is THE winner in this category)
"she suffers a lot" (while Astarion can argue with that better)
and etc, she's a puppy, hot one, mechanically, so you should deal with it, I guess I just don't like true good characters, they are boring a bit, no doubts and etc, pure true/kindness and etc.
I still prefer Shadowheart and Minthara for girls and Astarion as a male interest.
Only just recruited Minthara. She also looks nice, and a shaven raver.

I agree. Bonus point for playing as a Tav from the Underdark: finding common ground in a very strange place for both of you.

Once patch 5 hit with the new epilogue I figured it was time to give him/his romance a shot and it has actually ended up being my favourite companion romance ending by supporting his challenge of Mystra's domain of magic.
The finale epilogue with him (being vague as possible to not do spoilers) actually seems like the most impactful for your main player character and if Larian ever decides to do DLC I hope it continues on from the ending because playing with your main PC and Gale afterwards would be super fun.
