But the game doesn't really look or behave as if there are "two" main characters it has to give attention to. Only one long rest scene (like romances) can occur for one person per night as far as I have seen playing multiplayer.
No issues in co-op. Just make sure you share the opportunities for talking, more or less. Because that affects approval.
Shadowheart is easier to romance in Act 1, because Karlach's approval boost becomes available by Act 2 earliest. You do not need to spoil yourself to look those up. Just act... with common sense.
Aka stuff where Karlach is involved, let the player who wants to romance Karlach do the talk. And vice versa with Shadowheart.

Someone mentioned it already but just make sure you each get chances to lead conversations. If you think something you are going into is going to go best with one party member or another, change who is going to do the talking accordingly.
As for resting, you don't necessarily have to do it more often. But it creates more opportunities to go around and talk to people. I usually knock out some smaller fights and then tackle a larger fight before camping. Seemed to create enough opportunities for us.
Now I did notice the hosting player seems to get more chances to gain approval or potentially gains bigger approvals. So if you are hosting you may need to let your friend take the drivers seat more often for some chances. (Or the other way if your friend is hosting.) But I haven't tested too extensively.
Sorry, sharing a bedroll with someone who is actively talking about wanting to bone me is very much a romantic situation. She does say she is too damn hot to do anything but it was still a sweet and intimate scene that I feel likely is required to progress further romance.
