Possible Bug with the Fighter Fighting styles
Now Currently I'm running a Female 5th level Ranger gloomstalker and 1st level Rogue. Upon Leveling up I decided to take 1 in fighter as eventually I want to end up with 5 Ranger 5 Rogue and 2 fighter. With the first level fighter I want to choose Archery which is suppose to give a +2 to ranged weapon attacks.

But yet when I finish the level up and I check her inventory under the hand crossbow icons she has the same as before I leveled her up. Which was a +11 above with a 9-12 below Shouldn't these have increased by +2 per the fighting style description? Or am I wrong on this?

You already got archery prof with ranger 2.

Actually I didn't I took 2 weapon fighting as a 2nd level Ranger as I'm dual wielding scimitars and hand crossbows.

I think you can only have 1 fighting style, the numbers for attack and damage are not always reliable, try checking them in your 2nd turn of combat.

Kinda seems weird to me that you pointed out they are female...

Did you take archery twice? It does not work like that.

Now as to why I pointed out the female I don't know either but I did it without thinking about it.

As for taking Acrchery twice it wouldn't let you as it would grey out the box not allowing it to be taken again. At least that is the way it is with 2 weapon fighting.

THere are a few steps you can take:
1. See if Archery shows up in your passive abilities (on the left side of your inventory below your abilities)
2. Unequip and requip the Weapons, sometimes you need to do that for your "To Hit" to update
3. Hover over your "To Hit" inside your inventory to see how the game calculated the value, maybe it is already calculated in.

With an 11 to hit, I could have some ideas on how you got there.
At 7th level you have +3 Proficiency, for the sake of argument, let's say you have 20 Dex, that would be +5 for Ranged Weapons, Archery adds +2 and an Enchanted Weapon (I could see early Act 2, very late act 1) adds +1
That should in total be +11, in case you dont have 20 Dex it could be you have used an weapon oil or your weapon is actually +2

It's really hard to judge whether your +11 is correct considering your build, without exact information.

Apart from that I don't know what other problem there could be. YOu can always check the combat log to see if it at least uses the correct to-hit for Rolls

It's always a havoc how BG3 shows to hit modifier and damage on character's sheet. You can equip or requip some items and get -1 instead of +1 and vice versa. So I advice not to take showed values for sure. Use combat log instead - it shows proper values.
It's a shame they can't fix character sheet "to hit/damage" for so long.
