You can do the same on Steam with Baldur's Gate 3.
It does not.
You can't as you need to use Steam and it needs to be online to install and activate your account. To disable updates in Steam you have to take the client offline. Then back online to play any other games online or update them. It's silly.
Once the GOG files are downloaded you can install it on any PC without an internet connection and it runs. No updates unless you download and install them.

If you do not know how, that is on you, not on Steam.
It did. The patch was something like 90gb, and then when I check my baldurs gate folder, it was down to 30gb.
