If you don't want to update the patch just pause it or stop it. But I guess eventually you will need to install it.
I am still struggling to update my game as steam stops and breaks the download once in a while, so I decided to uninstall and then install again.
Horrible patch management both by Larian and Steam.
The game is awesome though :D
Edit: Or what Mik just said which could be the case for me too since I use mods. By using mods you sometimes replace some bin files. Especially if you use stuff like script extenders. That means the game will fail validation and redownload the edited files. Which could be a huge file(s) being dozens of gigs large.
Dang that's a pain. I had that happen once on a old computer downloading a patch, because I essentially needed double the space for the game and didn't have that left on the drive. :/
