I have no idea what going wrong
1. I could find <key>CFBundleVersion</key> in Info. plist.
2. The version string there was "1.0".
3. I still changed it to 4.1.1.3905231.
4. After launching the game, I see 4.1.1.3882084.

But actually, there is no "Steam" folder under Application Support on my device. I found Baldur's Gate 3.app using search function, found it under Applications, and accessed content from there. Maybe that makes a difference?
This nightmare is haunting friends and I. We tried the above method and it invalidated Larian login and settings.
1. On the main Larian launcher on a Mac, go to the Support tab (on the top left).
2. Click on the "Open Installation"
3. A Finder window will open with the exact location mentioned by Kshamr above. You follow the instructions:
5. [optional] Repeat after me: Please game, believe your mirror image. Accept it. Everything starts with acceptance.
TL:DR; Changing it from 1.0 to 4.1.1.... won't help. You need to get the correct BG3.app and correct Info.plist file.
