good question!
Find a way to knock him into an endless chasm.
Try turning him into a sheep and dominate the animal?
On a related note, I'm not sure why the devs opted to include the Non-Lethal toggle at all, considering all its issues; the game treats unconscious important characters as outright dead anyways for plot purposes ("Nope, you can't spare and convert a specific enemy commander!"), you don't get any "on kill" equipment or spell effects to activate while using it (this can mess up some "free re-cast" abilities), Speak With Dead obviously doesn't work, and a lot of enemies (bosses especially!) do not drop their loot until you fully kill them. If there's only a single battle where the Non-Lethal option actually matters to finish a quest in a particular way, then that's a dumb reason to go to the work of including a buggy toggle.
There's some missable dialogue that implies he can casually regenerate from some serious wounds, though not on the same level as a certain other character.
