Finesse Weapons are great for Barbarians going Dex.
But Barbarians are kinda sorta 3 stat dependent, which does gimp them a teeny tiny bit in a game with level cap 12 and a point buy system.
But like you yourself pointed out, there's loads of items you can use to help. I think you can find gloves/bracers that give +2 AC if no armour is worn all the way back in act 1, which of course are amazing for a Barbarian. Or the gloves that set your DEX to 18 are also amazing.
Then there's the gloves from Raphael's house that set your STR to 23 or the necklace that does the same for your CON.
There's also plenty of elixirs to set your STR to 21 or 27 as long as you don't long rest all the damn time.

Multiclass is always a nerf. Statistically.
stick your barb in medium armor (crit immune preferably) and set them loose.
Seriously though, Barbs are only the 'king of Hp', but they really need the extra AC from armor.

Getting 2 levels of Fighter for a Fighting Style and Action Surge is not a nerf to any Barbarian, Berserker in particular, since their level 11 ability is basically worthless.
No. You get one or the other.
ehhhhh not really. 1 level can be a great dip. like Fighter for all armor/weapon proficiencies AND a fighting style.
or 1 level of barb for defensive rages, etc
Legendary 5e question. I believe the PnP answer is no. Similar to how natural armor class doesn't stack with Mage Armor.
Ah darn, would make for a very tanky Monk/Barbarian.
