Once you finish the game, you finish it, that all. Either leave it or start another playthrough from zero. (it still have a lot of replay value, though. As there many form or resolve quest or even how to play)
Have a great day!
Raphael
Ansur the Dragon
You can do whatever you want, whenever you want (well at certain points the game warns you CLEARLY that if you progress into the next area the ones behind will be locked out).
The game ends when you do the last quest, there is no time pressure.
You can beat the game in 50h or 120h.
Since there are loads of choices it is very interesting to start a new game and make different choices, seek quest that you left behind in the first playthrough etc.
For example in my 1st playthrough i went with a self made character, went through the underdark and skipped mountain pass. Also skipped some stuff in ACT 3 to finish it faster.
In my second i went with a Dark Urge character (which gives you character a proper backstory) skipped underdark and went through the mountain pass, and in ACT 3 did everything i didn't do in the 1st run. Plus i used all different classes and increased the difficulty.
No end game content and the existing ends are pretty short and lame. You play, you finish, start again or uninstall, that's really all there is to it.
That said act 3 has a lot of boss encounter with unique mechanic, unlike act 1 which only have grym forge golem, although it's more of a gimmick boss and dror ragzlin. , act 2 has quite a bit of boss but you can gaslight all of them except balthazar and avatar of myrkul . Act 3 every companion quest have their own boss, with karlach "boss" tied to the story, wyll "boss" is a gimmick map, and the rest have their own boss to face. Plus the hidden boss the dragon ansur at wyrmway
