They can be anything you want.
Shadowheart also hits on Karlach a few times, and Wyll on Shadowheart and Lae'zel, so they aren't interested in just the player character
There's some straight relationships outside of the companions, though.
Just like fanservice thing in anime - materials that is risqué or sexual in nature and added mainly for appealing to the audience(usually to appeal for male audience). Or fanservice in Kpop when idols do certain things to please their fans like: aegyo, cheesy lines, flirting, showing muscles...
In many old rpgs(and new ones like Genshin) main protagonist is usually silent but still highly attractive to opposite sex npcs just so the player behind could feel special. So this playersexuality is not a new trick and certanly not a part of agenda i believe.
Well, there are background characters who you can assume are and always have been straight such as Kelthric with him being married and never once mentioning anyone else. The same can be said of most characters relations(Father/mother) and I think the Thiefling couple from Act 1 and 2 are straight considering they're in a monogamous relationship and never once hint at being interested in anyone else.
Otherwise any notable character that you can interact with: They're either bi or gay or leaning toward that end of the spectrum in some shape or form.
Of the ten companions maybe half of them are gay/bisexual/lesbian. Of the remaining 5 two of them are established as being straight from the previous games but can't be romanced while Minthara is completely broken and forces four companions to leave your party. Gale was written to be straight and he in no way, shape or form hints at being interested in men. The only time he's construed to be interested in men is if it's the playable character.
