The data for the look comes from the mod. If you delete it, then it's gone, and the game has no idea what to display.
But no, you'll lost any change and character will revert to default look if you uninstall it
Any mod that changes the Save files or the actual BG3 code files will NEVER work reliably without the Mod present. It is also likely to fail totally whenever the game is updated by Larian.
Larian does not currently support modding at any level and does NOT take into account Mods when updating the game.
If you are going to play with Mods, you should view the game as 'Early Access' and that at any time a complete wipe of the game and progress will be required.
There are several mods that unlock existing faces, hair, eyes, origins, classes, races and so on. These types only effect the character creation screens and not the saved game. So once created they loose nothing and function without issue after uninstall.
However those that add new faces (not stock) or new hair styles (not stock), those loose their reference files when uninstalled and the saved game will no longer function.
