gith monk 5+ and rogue 3+ gets tons of attacks, can drop dex/wis ac crap and wear race armor with str build focused on tavern brawler and maybe mainhand one of the good staves.
a well made dual hand crossbow sniper is a joy to play as well. Little bit of a late bloomer as you need feats to make it shine, but by end of act 1 its already a terror. This usually is a mix of rogue and fighter or ranger.
past that, you can get into weird caster hybrids which require precision to pull off, best to look at others' ideas online or load your old game before a typical fight and respec many times to see what works.
Level Pala to 2 and grab Thunderous Smite, and then go all in on Tempest Cleric. Grab the tadpole power that gives auto crits once per day, combine that with Tempest's channel divinity to grant maximum damage on your smites, for massive damage. Most of the time you are going to be a caster, but when you need to kill a big target you can smite it.
Wis high as possible, high Con, use elixirs for the strength boost. You can put some points into dex if you really want, but you really don't need to - grab alert for the initiative boost if needed or slap on those dex gloves.
I started with Thief 3 and now with 1 lvl of Fighter it started to show itself - Can tank as well with 20-22 AC, DR, great saves, has early gear to support it. Does not really "need" to hide always. Can stealth with right medium armor, picking deep gnome gives you advantages to saves and stealth and able to fit into small and tight holes - if you know what I mean.
I also love to play thief. If you use it's abilities it's very different from a standard character.
If you didn't experience the Wizard I also recommand it to you. Not the most powerful class, but it has so many tools it's absurd. If you loose a fight with a wizard you can probably change the outcome just by bringing different spells.
Druid can be also an experience if you use the transformations for utility and not just the combat.

And for the ultra gimmicky but hilarious to play character: War cleric/Paladin/Warlock/Champion :D
And yea, the common denominator is that paladin, warlock, and thief are overpowered as hell. Add 5 levels of fiend warlock, 3 levels of thief, or 2/5 levels of paladin to any attack focused build and you just made it a powerhouse.
