Best advice I can give is to take your time, talk to everyone at least once (especially companions), explore blank spots on your map as well as you can, and don't get taken in by the narrative urgency the game tries to force on you. There are exactly four points in the game where you have any sort of time limit to get stuff done, and only one of those doesn't have an on-screen timer for it (Grymforge, can only long-rest or go to camp once). As long as you're aware of act transition zones (Entering the shadowlands from either the mountian pass or the elevator, and entering the pool at the end of the Gauntlet), you can always backtrack to explore more or collect things you've missed.
As others say you would need several play-through's as some achievements exclude others.
I did a roughly 300Hr play through tactician an got 55% achievements. That's with Karlach romance and 'good' ending.
Some achievements are also linked to damage done spell used eg I had a monk and so got a kill someone with fists achievement (or whatever it is actually called). But you could probably do this by using a normal fighter and beating up some random NPC. there are alternative ways to get some achievements.
Unless Larian release a full list of all quests side quests and dialogue choices which change plot/reward then I'd go for achievement as a guide.

Thus, I think, for the completionist, it is also an invaluable resource. There are shops in BG City whose existence I never would have known about or found without the Wiki. Like, did you know there is a merchant in the city that sells only books? A bloody Barnes & Noble, right in the middle of the city. Only found out about it through the Wiki.
