A guard that I'm trying to steal from.. Descendant everything has -4 on the gadget but he seems to discover that I'm sneaking around almost regardless of the situation and above all he notices when I'm about to sneak something. He has a wolf following him - can it really affect the outcome? Why does this npc seem more sensitive than others in the same area?
Finally, is it possible to knock down npcs to, for example, be alone with the person you intend to steal - thus rendering them unconscious without killing them? Seems to me that BG3 says that - too much hp on NPC!? How does non-lethal violence work - when will they wake up again? I knocked down a more important player in the Druid camp but it never seems to come back up :)

Technically no and yes
Just have a party member talk to the merchant while you pickpocket him. The timer to escape will start when the talker stop his conversation.
How about knocking other NPCs out (for fun) and steal from the one left?
Target is the only thing that you should care about then? DC is only statisitcs?
