Maybe you do not play many party based rpgs and are not very familiar with them, cause those two are some of the easiest in the genre.

In BG3, I am now fighting Grym. This guy has like 300 hp and is has high resistance.
i mean, lvl? cleric whit 38 hp, one shot burns her 1/3 hp is not too brutal, is too easy for you imho, if enemies are hitting her is because her AC and position in the battlefield, plus a cleric is a caster and i think AI will try to shot caster first if no any lower AC or nearest enemy in the sight
Make sure to explore everything, one of my biggest mistakes was rushing.. take your time, dont hurry up. I found a few locations and A LOT of quests that i never saw in act1. A lot of secrets, too.
Act 2. The drawf island.
Well, how do I get good gear. My Wyll still only has level 10 armour.
I raged hard until i found one simple solution.... which was to set the map on fire with wall of fire spells and run away, letting the enemies burn themselves to death trying to get to me.
Didn't help that whenever i tried to stand my ground and fight in that room, people on the next floor would aggro, lol... ugh.
Fire does 0 damage against it.
