I forgot, where is the access to the underdark where you meet minotaurs? Or any other route to them

They're near the Selunite outpost you can access via the entrance in Priestess Gut's chambers.

You can reach the minotaurs from anywhere in the Underdark. The directest access point is the secret passage in the Zentharim Hideout.

I know only 3 routes
1. Inside goblin camp
2. Jump in the giant hole where you fight the boss spider (use featherfall)
3. Some elevator hiding behind illusionary wall at the smuggler place where you bring the chest

There's at least the route via the Hag's Lair on top of these.

Yup. I believe the featherfall route puts you almost directly into combat with the minotaurs. But if you're not married to the idea of hell-jumping to the underdark, the selunite temple entrance puts you very near them but gives you a slightly more advantageous position to attack them from.
