In the second hag fight, how do you destroy the Pearlspore Bell mushrooms? I destroy one, but it comes right back up the next turn! How do I stop them from regenerating until all 3 are destroyed?

for me you had to one shot each mushroom to stop them from healing

They heal but they shouldn't be respawning. If you take them down to 0hp they should just be dead.

I think it is mentioned in a book leading up to that fight that you are supposed to destroy the mushrooms using fire. That is what I did and they did not come back. I do not know if this is the only way to destroy them though.

Once Ethel (Invisible) is in the room, you can sneak around and destroy the mushrooms without starting combat. You have to use some jumps to avoid her line of sight. If she's still in the tavern, she'll teleport in and combat will start as soon as you kill the first mushroom.

This fight was a bit confusing to me as I didn't see Ethel anywhere in the room, and seemed to be able to walk around at will. I had to destroy one of the mushrooms and then she appeared. They do regenerate health pretty quickly (before she appears) but if you hit one repeatedly with a powerful attack it will die (and then she appears). Beware that if you use a melee weapon the mushroom explodes and that character will take some damage.

If I remember right there is 3 spots where mushrooms are. I split my party in 2, three close to the where the hag is, one in the back grotto. I started with the one in grotto and get rid of this one in one round. When the battle starts, the three get rid of the second mushroom. As soon this one is no longer an issue, it's all in for the hag but Shadowheart. Shadowheart simply get rid of the last one with fireball (scroll) and fire spells. Don't forget to knock out the hag (no lethal damage) if you want to save the kid.
