i'd suggest Baldurs gate 3 mod manager, and then using it to add mods. specifically you need modfixer to start with, as it will recompile the .pak of your mods into the game. this means when you launch the game from steam it'll need 5 minutes to recompile first on first launch after adding mods, every launch after that is quick. your safe to use any mods using this method, just make sure that if you remove these mod from the load order that you delete the mod related items using the tutorial chest mod (it auto deletes itself and it's contents after a few rounds of turn based mode) before removing the mods.
for any mods that you directly copy paste into folders, note down what and where, and delete those files if you want to remove them, and then verify your files on steam.
If you are comfortable;

Download the laughing leader mod manager from github. Extract wherever then run the application - the mod manager will do a lot of the heavy lifting for you.
In the mod manager, go to tools, and hit "download and extract the script extender".
Then, go to your favorite mod site (I use nexus mods)
https://www.nexusmods.com/baldursgate3
Find the mods you want, make sure theyre relatively recently updated, and hit manual download.
Take the winzip archive and click and drag it from your downloads folder into the mod manager you downloaded earlier; Laughing leader set it up to automagically extract the PAK file (the actual mod) and put it in BG3s actual mods folder.
If a mod doesnt automatically go, see if you can find the PAK in it and just drag that over.
Once you have your mods from your favorite source, move them to the left side ("Active mods") hit save mod order, then hit export to game. From there you can run the game and itl work if youve done it right.
For other problems with the mod manager theres a small tutorial on the github page and and laughing leader has a discord you can ask questions in.
Larian has its own mod fixer now, you do not need the override mod.
RTFM: Many of the problems people encounter are because they didn't fully read/understand installation instructions. OR, they did understand them, but the mod author wasn't as thorough as they could/should have been. That's a red flag. Read the posts people made on the mod. That can go a decent way of letting you know about the mod quality.
Create Backups: It's a good practice to keep a vanilla backup of ANY file you are replacing/modifying. If something goes FUBAR, put your vanilla backup back in.
Many games have mod managers that help you install and activate mods. Some games are easier to mod and require you to simply drop a folder/file into a designated mod folder. Always check the installation instructions.
Once you create a save game with a mod, expect to have to keep that mod active for that file. Even if the mod says it's safe to remove, you could run into problems. It's part of the risk.
I predict this one will be back in a couple of weeks doing the modder fanboi lament -- 'OPDATE BROKED MAH MODS DIS GAME SUX!'
