Haven't tested Druids in the game, so I'm not sure what's happening with them, and you could maybe try clarifying your post a little. It's slightly confusing.
What happened here is I had 8 health, went into Wild Shape. At one point Wild Shape had 9 health and took something like 20 damage. I reverted to my natural form completely dead.
You just took so much damage that it took out your WIld Shape HP and enough carried over to take out your normal form too.
If in that case you had taken less than 17 damage, you would've stayed alive.
It's exactly what should happen in that case, you just need to understand the rules.
That indeed shouldn't happen, AFAIK.
-You have 10 max hp.
-You're currently at 1 hp.
-You're dealt 12 damage in a single hit.
-Because this would reduce you -10 hp or less, you're instantly killed instead of going to 0 and starting to roll death saves.
I don't know if this rule is actually in BG3, but if it was applying to animal forms and checking their max hp or something like that, it would explain why I saw the same thing of instantly being knocked from my animal form to dead early game but not later (when my animal forms had more hp), rather than the damage rolling to my main form as it should. Or maybe it was checking my main form's max hp, but not factoring in the current hp I still had in my base form.
Unless you cross-class or heaven forbid, are adding flavor to a build
