Good question! The beholder in question doesn't need wings, it uses magic in some way to fly.
Well, according to the spell:
> The creature is limited in the actions it can perform by the nature of its new form, and it can't speak, cast spells, or take any other action that requires hands or speech.
Its worth noting here the "by the nature of its new form" part. If the new can't fly, magical or otherwise, its not in its nature to fly, so RAW would indicate that no, you can't fly.
Whether RAI would disagree.... i leave that open to debate.
Casting Telekinesis breaks the concentration on Polymorph.
We do have a party of 4 though.

Does a Beholder Fly or does it float?
I would think it floats X amount of feet off the ground but maybe I am wrong.
If there is no surface and it floats shouldn't it fall into the chasm?
