But check out pillars of eternity, divinity original sin 2, and wasteland 2 (or 3, but thats expensive and doesnt have multiplayer)

I recommend these in exact order
- Bg1 and bg2
- Pillar of Eternity both 1 and 2
- dragon age series
- pathfinder wotr (play pathfinder after you understand the spell and classes very well, this game is designed for meta min max player)
These are the main one. If you still crave for it you have
- Neverwinter nights (multiple campaign)
- Icewindale
- Torment planescape (im playing this when BG3 launched)
- Knight of the old republic 1 and 2 (also good old classic very easy to learn)
- Wasteland 3
Other game that you can check but personally I dont really like it that much.
- Tyranny
- Torment tides of Numennera
Immersive sim aspects - not too many have them, Divinity Original Sin 1 and 2 (they aren't related so don't worry about playing them in order) and the old Ultima games.
Polish and cutscenes, Dragon Age Origins is well received though it's a little old by now.
Writing and gameplay, I rather like Pillars of Eternity 2 (you can skip 1 honestly) and Tyranny
If you really want to dig into rules and details both Pathfinder games are good, but you have to want this. They have literally hundreds of subclasses.
Among older games of course I suggest Baldur's Gate 2 (1 has not aged very well in comparison), Fallout, Arcanum
If you want the best writing and don't care about gameplay, Planescape Torment
I'm a personal fan of Underrail but it's hard to suggest. And then there's first person crpgs too, but this is probably enough without listing every CRPG lol
I'd recommend, DOS 1 and 2, Temple of Elemental Evil (If you like D&D and want to see what 3e was like) and Expeditions: Viking (Rome is good too, but I think Viking was better)
Ultima 4 and 7 are also great, but 5 + 6 are just a bit better.

Wizardry 8 (The whole series is decent but 8 is the pinnacle.)
Of all of these, I would recommend Planescape Torment, Tyranny, Arcanum and Disco Elusium if story is your thing. If you want the best game system, Wizardry 8, Pathfinder, Path of Exile and Divinity are stand-outs. If you want uniqueness and originality, Fallout, Arcanum, Plansecape, Disco Elysiuim or Tyranny are all good choices. My favorites (for no particular reason) are probably Plansecape Torment, Star Wars KOTOR, Arcanum and Tyranny.
And yes, I have completed every single one of these games at least once. Most of them more than once. Happy playing.
