backpack - healing/support
pouch - offensive/crowd control
burlap sack - situational equipment
not in bags - shovel, thieves tools/trap kits, water, scratch's ball
don't bother with wares in inventory, send everything i intend to sell at camp and when i'm ready to get money i warp to camp over and over from in front of a merchant using "pick up and add to wares" with shift clicking from travelers chest.
When my guys all have heavy packs, I go to camp.
In camp, I sort by type and move blocks of junk into the correct backpack for each one (scrolls in one, potions in one, books in one, useful but unused magic items in one, etc) and gather up all the vendor trash. Dump all the camp supplies to a chest too (this is an astonishing amount of weight, I think my camp supply bag now weighs like 400 pounds).
The biggest complaint I have is that we can't name containers, eg change 'backpack' to 'scrolls'.
Ive mostly stowed potions and scrolls for later. I may never use them, but its for act 3 / late game fights where standard tactics fail, if any such exist. I am holding back advancing as I want to explore acts 2 & 3 with my wife and not have knowledge of every encounter and where every secret is etc.
My main/PC carries the magic arrows. Gale carries the scrolls. Shadow heart carries the potions/poisons/grenades. . I have bags to put each in.
And yes, I get that is more than for characters...but I switch it up a lot with Shadow-heart ALWAYS part of the group. When Gale isn't around.......scrolls with my PC hang out till he is. I save him and his limited spell slots for boss battles, anyway.
Oh, and camp supplies? That is easy......send to camp
Lae and Kae carry all the heavy ♥♥♥♥ to be sold.
That is bascially my method.
the struggle for me is what inventory will show during barter/trade screens... it would be amazing if they only showed items OUTSIDE of those pouches/bags/backpacks. (things i dont want to trade/barter i place in said puches/bags/backpacks) meaning the trade/barter screen shows all sellable items you have regardless of how you've organized.

I may be misunderstanding what you are saying...but if you right click there is a 'send to wares' button that will allow you to sell stuff that the game thinks you should not be selling...but you, as the player have decided.....nope YOU REALLY WANT TO anyway.
Now...if the game thinks you shouldn't be selling it...there might be a reason....BUT...I love the fact they let you anyway.

i'm saying... the trade/barter screen shows EVERYTHING you have that is 'sellable'. meaning it goes through all your bags like airport security...
i would like it. that the bags themselves are a gate to that. such that the character sheet inventory screen becomes a buffer. at which point 'me' the player can decide to keep on that screen or place in pouches/backpacks/bags.
anything 'the player' doesnt want to be sellable and show on the trade/barter screen is hidden from that screen by the pouches/backpacks/bags.
AND you might be misunderstanding BECAUSE the UI is that different from gamepad to mouse. I'm speaking from the POV of playing with gamepad
Pick up several kinds of containers. Backpacks, Sacks, Pouches, Crates, Trunks, Chests, Wooden Barrels.
In camp Put them in the travellers chest. In there organize loot into containers. Armor goes into one, weapons another, crafting another, story items another, etc.
Send most loot to camp and organize once before you long rest.
On characters, give each a backpack and a pouch/sack.
Put alt gear for each into the backpack. Put consumables into the sack. Some misc quest items stay top level.
Main char gets an extra container for quest items. Also keeps most universally useful consumables. Remember you can hand them out to team during combat at no cost.
When looking for items, remember you can use the search bar to filter by category, or search by name.
Practicing this helps me keep sane....
what i'm saying... the merchant locations, geographically speaking (location on the map), 9 times out of 10 could easily be considered a security checkpoint for the area in which they're located. And do act as such once you decide to start trading with them. regardless of how players organize/not organize the merchants literally go through everything you have as if the merchant is a security checkpoint.
a few examples of the above... the druid grove, last light inn, even moonrise tower, the myconid in underdark.
merchant locations that geographically speaking are located very very near entrance points for an area.
the fact that the game has the trade/barter screen literally go through all your bags without player say makes the merchants a security checkpoint in corroboration with their location.

From left to right, top to bottom:
Alchemy Pouch - self explanatory, I dump all of the alchemical stuff straight into this.
Bewildering Adventurers Backpack - I put all of the redundant foibles that party members come with, such as spare key rings, backpacks, alchemy pouches, camp supply packs, anything only my main character needs to carry, really. Also " unique / special" containers like Kanons Stash, Chest of the Mundane, Heavy Backpack, stuff like that. Curio container storage, essentially.
Camp Supply Pack - should be pretty obvious, this is where I dump all of the supplies that I've acquired during my adventure.
Caravan Strongbox - since gold has weight, this is where I put it. Every time I get more than 5000 gold, I split off 5000 and drop it into the box. The caravan strongbox is a somewhat unique chest from a quest in Act 1, and the name just makes sense for a place to store money, lol. If I collected gems, I'd put them here too.
Cartilaginous Chest - curios of all sorts. Things like, Halsins Pipe, Harper Pins, Selunite Idols, the DoS2 paintings, those various brain jar things, the Hags special potions, anything that's interesting enough but isn't a quest item I threw into this. Personal collectibles, I guess you might say. The chest itself is quite special looking, if not exactly unique, so it works for me lol.
Curious Book - this is where I throw all of the notes, books, slates, maps etc, anything that can be read, it ended up in here. This hollowed out book is found in a burrow somewhere near the windmill in Act 1, I think. You might need to pass a Perception check to find it.
Elegant Chest - I put all of the named armour / clothing of green, blue, magenta and orange quality in this chest. Boots, gauntlets, chestplates, helmets, etc - that's what this chest is for.
Gilded Chest - same as above, but for weapons and shields. Anything with a name, green / blue / magenta / orange, it gets tossed in here.
Heavy Chest - corpse storage. Any interesting corpses from foes or whatever got collected and thrown in here. Stuff like the Tiefling kids from Act 1 after the goblins were through with them, as well as NPCs with the boss healthbar, that kind of thing. Also a bunch of skulls, intestines and corpse parts. A very morbid, edgelordy type of chest, which is perfect because it comes in black!
Metal Crate - "unique non unique" stuff got thrown in here, things like Fist armour, Paladin overcoats, Githyanki weapons and armour, just somewhat uncommon stuff that isn't unique, but is interesting, if that makes sense lol. Rusted, broken weapons, useless stuff but fun to collect a few copies of.
Moss Covered Chest - this is where I tossed all the spare grenades and arrows, since you don't need to carry them all at once, right? Nothing much else too it. Looked like a heavy duty combat grade chest, so in they went!
Opulent Chest - this chest is where I put all of the named jewellery of green / blue / magenta / orange rarity. Amulets and rings.
Peculiar Clothing Chest - this holds all of the clothing items in the game, camp clothes that is. Also other kind of useless clothing like hats, gloves and boots which don't really provide any combat effects but can't be worn around camp either.
Pouch - one of two pouch variants what I call the "drawstring pouch", this one I used for storing spare potions. Not much else to it. Constantly gets mixed up with the dye pouch, so I probably should have picked better.
Pouch - one of two pouch variants, what I call the "coinpurse", this one got used for storing all of the dyes I bought, found or stole. Constantly gets mixed up with the potion pouch, so I probably should have picked better.
Wooden Barrel - can't help but pick up any "special" kind of barrel in this game, so this is where I store them, since it just made perfect sense to use a barrel to store more barrels in. Water, oil, firewine, smokepowder, brine, nautiloid tanks, even a bubbling cauldron I'm not sure where I found and the runepowder dirty bomb, if it's an environmental hazard I chuck it in here.
Wooden Chest - it used to hold scrolls until I found out they were basically weightless, now it holds sussur petals, or whatever they're called. Those anti-magic flowers that wilt if you take them out of the underdark, but can be kept if you put them in a container before sending them to camp. Also used to contain the Druid Idol thing, but it vanished at some point and I'm not sure where it went, lol.
Wooden Crate - contains all of the "mundane" equipment like lockpicks, trap disarm kits, unique but not named or rarity coloured weapons such as the Kings Dagger, and a few basic weapons like Hand Crossbows, Longswords, Greatswords, stuff like that. Also spare musical instruments.
Wooden Trunk - vendor trash. Anything marked as wares, that needs to be sold as soon as possible, is thrown into this trunk. Junk and stuff like that. Lots of rotten mushrooms, for some reason.
Stuffed Bear - contains things I thought might be useful but are probably vendor trash, like ingots, rope, hammers, but also contains old quest items and other things like that.
And that's basically that. That's how I've been sorting stuff for the whole game, lol. Dunno if it's smart, correct or interesting, but it is what it is.
