You gain XP and max out at level 12 as a character, regardless of class.
You can split those levels between 1 to 12 different classes as you see fit. Can't get more. You can eg. be 4 bard / 4 warlock / 4 paladin, or 6 fighter / 6 wizard, or 12 barbarian, but it always adds up to your current character level.
You can respect @ Withers
The former get less spell slots (up to 3 at level 11) and less spell selection. But they can recharge their spell slots 3 times a day. They use Charisma for casting spells, so they're also good at talking to people.
The latter get more spells slots (up to 16 at level 11) and a wider selection of spells. But they only recharge their spells slots once a day.
Of the schools of wizardry of particular note are Evocation Wizards, who can do AoE damage without hurting allies, and Abjuration Wizards, who can be really hard to kill.
I don't play Sorcerers...
You can check out all the details of classes at https://bg3.wiki/
The only way I know that I haven't bother install any mod yet atm is that Max level 20 (Multi Class Only) mod where it lets you get 12 on main and 8 on 2nd class.
