Accidentally Sold Mind Parasite Specimens
As the title says, I had two illithid specimens that I sold before I knew what they were.
One was from Nettie and the other was from than guy on the road with the 2 cultists. I have gone back to every single merchant/trader I've visited so far and none of them have the items.

Is there any way to get these back?

You can sell them? I am pretty sure they are hidden in the trade window.

you can do that until you unlock the powers . After that they are auto added and cannot be sold. I think you can buy back from the merchants you sold.

Live parasites can't be sold. They have the orange border that denotes quest/important to story. If you found any and are not at a point where you are using powers they have to be somewhere in your inventory still or you dropped them.

Dead parasite bottles can be sold as they are useless.

If you have already activated using the parasites any live ones go directly to the illithid power bank for use and do not appear in the inventory. If you have begun there will be a marker up near the mini-map showing how many worms you have. Or you can click "B" to open the illithid power menu.

You can just buy them back (at the same price you sold them). As long as the NPC doesn't die, and you don't leave the act, everything should still be there.
If you have indeed gone back to every single merchant/trader, and you still can't find them, then no, that sounds like a bug, merchant inventories shouldn't get rid of the items you've sold them, ever, even when they restock their wares.

However, are you sure you didn't just "absorb them" after unlocking Illithid powers..?
They automatically get used on pickup once you've gone far enough down the Illithid path, and instead add 1 counter to the "Illithid powers" menu.
There's a list on Fextralife of every single trader in the game, so if you really want to make sure you haven't missed one, you can check there, though you will risk having all other merchants spoiled for you ahead of time.

I didn't get the tadpole dialogue option until I picked up a true soul tadpole, and even then I didn't get it the first time I killed a true soul, despite having already had 2 illithid dreams!

I checked all my party character's inventories and their illithid powers just to be safe, and I've also rooted through my camp and visited every single merchant that I have access to. Quite frustrating really, I wish there was a way to recall quest items :/

Just use Cheat Engine, you can add back any lost tadpoles, then go back to playing legit. ;)

The only merchant I have visited before that I haven't is ethel, I already did her quest and she's flown off somewhere with Maryna . I'm fairly certain I would have sold it to arron though as he's the closest one to the waypoint lol

I've checked everyone's illithid potential just to be safe and nope, no tadpoles :/
