But you do in this game, you get to kill the hag in a very gruesome manner in her own environment in act 3
Like we've got literal demons flying about, illithid eating brains, beholders... but we're supposed to beware of some random ugly baba-yaga in a swamp hut? It is basically just a really ugly old lady.

In mythology hags are usually considered very powerful, not unlike lichs and vampires, and for the same reason: they are intelligent and have a very long life, so a lot of time to learn things and increase their power.
In Witcher 3 IIRC one of the most powerful boss was a group of 3 crones.
