Enemies and 1 hp
Is this just some cheap mechanic to make the fight go longer. No matter what I use (spells, bombs, melee .. a large number always have 1 hp so they get another attack and seem to critical me with grim regularity. It really kills the floe of the fight knowing basically you have to land the killing blow twice way too often.

I think that undeads get a death save that leaves them with 1 HP

Some enemies have special skills/spells that allow for this. For example some Acolytes at an Act 2 location all start with Death Ward activated, which does exactly that, first time you're brought to 0 drop to 1HP instead. Or Half-orcs get the same thing as a racial trait, Relentless Endurance(you'd have it if your PC is a half-orc too). Always check the enemies' buffs and traits and most of the time you'll find what is causing it and how to counter it or play around it

I still think they should add the downed feature to enemies. So when you bring them to 0 hit point they get the same cheat grace period players get with the chance to get back up.

OK .. that helps .. II have been playing DnD since 1st edition so this not dying over and over was getting to me. If there is a reason that is far better. So often the pop-up for effects appear and disappear so fast you never get a chance to read them on many occasions. is there somewhere maybe I am missing where they so a combat log? so you can be sure of everything that happens in a turn?

Right click the enemy and open the Examine panel, usually it'd be something listed there. Or in the case of the Acolytes for example you can even see it as an active spell below their healthbars.

Isnt there a feat that lets you have 1 hp instead of getting downed? They probably have that.

As PaloG said, just check the examine panel.

There's very few enemies that can do this. Greater Zombies have undead fortitude with gives them a 1hp revive when hitting zero, and the mages at moonrise towers have an enchantment on them doing the same thing.

You're either being incredibly hyperbolic or severely unlucky with damage rolls to consistently get enemies to 1hp over and over again.

I killed some githyanki and they came back to life some how as soon as i downed them

All zombies have undead fortitude, so they have a chance of surviving any non-crit with 1HP if they make a Con save based on the damage taken. Radiant damage bypasses this.

Death Ward is also a thing, along with Half-Orc Relentless Endurance which activate exactly once.

undead fortitude and the death ward spell i think it is called, will keep you at that last 1 hp if you take a heavy hit. you fight a lot of clerics in this game, especially in the second and third acts.
and i think some class features might have that effect too but i'm not sure on that one.
Goblin with 7 hp. My damage range is 6-14. IF I hit (80% chance to hit = nearly guaranteed miss in this game), I will 80% of the time (now being hyperbolic, as more often than that, I will critical miss instead), manage a hit for ... 6 hp, Minimum damage. Then the Gobbo manages a critical hit for near max damage, downing my character by just 1 hp.... Rinse and repeat. Over and over. Need a 7 to hit? Roll a 6. Need 5 damage to stop something from getting yet another round in the fight... inflict 4. Shove something off a cliff with 4 hp? Fall inflicts 3. Get shoved off the same cliff with 20 hp? take 18 damage... Again. and Again. Had my main damage dealer roll a critical miss, each round, for three rounds in a row, while the lowly goblins proceeded to have a streak of critical hits for high damage. I pull out a major 'I cannot afford for this to miss' attack... only for it to miss. All the time. Frustration mounts. I know the characters really start owning the game once they pass level 5, but god the perceived BS biased rolls are hard to swallow. At least in a PnP game, I can retire misbehaving dice. no can do in BG3... stuck with whatever foul sorcery corrupts the odds in the opponents favor.

None of the common clay of the goblin camp have anything providing them with the revive with 1 hp perk. All of the common clay receive the benefit of that perk as the game seems to always ensure I do 1hp less than the target has, unless it cannot fudge the numbers (minimum damage higher than remaining HP).

Yep... tired of living in this salt mine...
