How to save all the victims in the witch's house in Baldur's gate 3?
So question is next: is there any chance to save those poor victims of our dear witch Auntie Ethel? Those can be found straightly after you pass the house of the
witch and that fireplace . One man is just petrified/stoned, another prey is just without head, third is inside the mirror 🪞, forth is constantly foreseeing his future.
Is there any chance I can save those people?

The petrified dwarf can be saved if you return to him after killing Ethel. If you let her go, he's hosed. You even get a little convo out of him.

The four masks can also be saved. Turn on non-lethal damage when you fight them and knock them all out. Then (very important) do NOT take the masks off of them. Removing the masks while Ethel is alive will kill them. If you KO them and loot everything off of them EXCEPT the masks, then kill Ethel... they live. If you manage it you can even talk briefly to the mask of regret afterwards, but it's hard to do. Sometimes she's just perma-KO'ed and sometimes she disappears after you rest and you never get the chance. But they live. You... don't really get anything out of it, but they live.

The elf who is losing his ♥♥♥♥ at you can be spoken to after you kill Ethel too. He just gives you a little talk and explains a little about what he saw when he looked at you. Again, nothing important but neat for immersion... and if you care to know he's alive.

The headless woman, the sad door and the blind elf (who seems to be a corpse anyway) can't be saved as far as I can find, but maybe someone else knows of a way? Dunno.
I killed and looted her. I came back to the room and the dward was still petrified and the elf still screaming about the future. I used basilisk oil on the dwarf, and he died. The elf remained screaming after talking to him. Is this some sort of bug?
Yeah, something went wrong.

Here's what happens normally if you kill Auntie.

1) The door is just gone.
2) The guy terrorized by the future asks if Auntie is dead. Depending on your answers he might just leave, or he might let you know that he saw a terrible future for you.
3) The petrified dwarf unpetrifies (no need for you to do it), and asks why he's not petrified. He tells you he has "The Bite". But if you do a medicine or arcana check, you find out that he never had the disease at all. He thanks you and and wants to go find his kids.

The dwarf i don't think so, he's voluntarily petrified for a reason that comes into play seconds after you bring him back.
You can save the guys in masks by knocking them out/avoiding them but you don't see them anywhere later so i'm not sure it matters.
you can save the dwarf with a check, I think nature intelligence or medicin, he's not actually sick she just tricked him into thinking he was so he'd agree to petrify himself. He'll lament missing out on time with his family and you can tell him he should look on the bright side he can still be with them again. You can also save the guy who's vanity made him seek out Ethel (in the alcove just to the left as you enter the mined roots area) The rest die if I remember correctly since they among other things have their heads cut off and such so not much to do about their fates.

Not really, if you can sneak past them or kill ethel in the house before she's able to teleport you can also free them.

YOu can also wear the masks if you cast protection from good and evil on yourself
I said lair the underground portion of Ethel tea house. The house in my opinion is not the hag lair. For act 1 confrontation with the hag.

I always bring 4 invisibility potions and sneak past the masked npcs. They do get spawned into the battle with Ethel. But if you ignore them and just kill the hag, they should be sane again and thank you for not killing them. You really don't have to kill her in the teahouse, it is very much possible to kill her in the lair and still save the masked ppl. I tried this a few patches ago, so it should still be possible. I see no reason why they would have changed this.

Yes you can save them all by killing the hag. There is one of the masked people in the room beyond the fake door that can also be saved by knocking her out but the other masked people in that room can't be saved and should just be put out of their misery. Then when you kill the hag you also want to save Marina at the same time and get the hag hair for a stat bonus. there are guides for how to do that online. You'll most likely have to save-scum to pull it off though.
If you don't kill her then they won't be saved and the person you knocked out will be hostile.
Make sure you long rest before proceeding back to interact with them all... assuming you were successful in killing her AND saving Marina.

The hag hair is the main reason I just kill the masked ppl during the hagfight. Shoving them into the chasm is the easiest way to get rid of them. Because the only way to save them is to kill her, but then you miss out on the stat upgrade.

You can kill her and get the hair. You'd need a companion hiding and out of combat during the conversation with the Hag. Get her hair, don't progress the conversation any further, then roll the companion up on her and kill her in one shot.

I do leave the one alive though. I don't think she's an integral part of the Mayrina/Auntie Ethel storyline but if I recall she does show up in Act 3.
