Some might say LS felt the same way when they got to Act 3 as well.
BG3 was never designed for you to do everything in one playthrough; that's why there's so much excess XP.
Wrapped up a quest, took a break. Sometimes I might do more if I felt like it. Eventually I got through it.

That's the problem, dude. Not everyone has fun watching characters jogging at 5 MPH, casting speak with the dead on every corpse to see if it has something useful to say about the toll house key for 80 hours. I like the game but it's very obviously paced so that everyone would play the polished part for a month, give up and go to Starfield, and then come back just in time for them to have sorted out the back half of the game. It worked with you.
Alternatively, since you mentioned FOMO, maybe breaking things down into more manageable bites could help? Use a guide to help guide you through things or only focus on one thing at a time. These are some of the things I do when I'm really enjoying something but am getting burnt out or overwhelmed. Hope some of it helps
