So why did (or didn't) you let Astarion bite you?
Roleplay reasons only. Basically, how creative are you?

I ended up restarting the game as a new character, a drow bard/necromancer build named Valrak Ousst'tar. Think gothic bard that plays songs to corpses, about death and blood and violence (his version of happy songs), who is more likely to threaten others instead of all that persuasive niceness friendship nonsense. He spent his younger days playing music for drow parties and raids before his Matron decided he'd be more useful in Sorcere. He thinks the surface world is way too bright with weird smells and why do so many of these lesser non-drow creatures think he'd ever be romantically interested in them. At best they'd serve as a casual curiosity.

If anyone threatens him, he'll warn them once (if at all) against them continuing to do so, otherwise will just kill them, talk to their corpse ("Who are you, again?") and then reanimate the remains to use as cannon fodder in the next battle or trap that needs to be tripped. (In case you didn't know, if you've killed an enemy, use Disguise Self, and then Speak to the Dead you bypass the "wont speak to their killer" dialogue.)

Which leads me to Astarion, who in this playthrough was already on thin ice after holding a knife to his neck on their first meeting, but he then goes to try to munch on my character in the middle of the night. He (Astarion) had already been warned once to not cause anymore problems, thus to stay true to RPing Valrak there is now an Astarion shaped pile of ash in camp.

He didn't care that Astarion was a vampire--being an undead was actually a plus for Valrak, trying to attack him again was the issue (and yes, trying to munch on you without warning IS an attack).

...On a side note, I really wish there was a "No, you can't drink my blood, I don't care if you drink anyone else's though. Go snack on some villager." option. It seems very "No, stick to furries" or "Drink from me, and then we can talk about you drinking other people."
