So how am I supposed to sneak Sazza out from this completely random Guardian statue that one shots me...

Have you tried disabling them by either sneaking to the buttons that do so or just simply shooting them from a distance?

Mage Hand has uses beyond fiddling with companions while they are asleep :)

If you have jump items, or potions, you can also outjump their range;)

The obvious solution [to me] was clearing that passage before escorting her. In fact I discovered that way before speaking to her (me doing exploration first, then everything else )

The statue kills mage hand right away and it's a pain with the goblins there too.

Talk to sazza say "Wait here" at the entrance, run to the little button and press it, do the fight, then get her after.
