The reason is to prevent silly trivialization of battle encounters.
It's a video game. The player characters and NPC characters do not need to, nor should they, have to play by the same rules.
Imagine if an NPC sorc was just like your sorc. Imagine them on their first turn doing a twinned haste, into a twinned chain lightning, into a quickened and upscaled level 5 fireball. You would not be okay with that.
More like maybe just retain your alpha strike advantage, but instead of letting them heal you engage them before they start to heal.
So, you're going to need to be able to make kills roughly once every other turn.
