You can see the option to do so at the initial character creation, but you cannot click on it.
And since DOS2 let you edit the companions however you wanted at the start, it's logical to conclude this game will be the same way.
They don't go away, but you don't have to recruit them in the first place.
Before release? As in the 72 hrs early play before the release? Patch 9 is the last EA patch. And yes, there will be options to romance any of the companions, by whomever your char is. Not matter what gender they are.
One of those cases is if its your solo campaign and your friends join your campaign and plays one of the EA companions, when you long rest you dont interact with them as much as when you are playing solo. Much less side character dialog, i.e. getting to know them and what they are about.
