Should I be long resting more?
I ask for story content. I finished Act 1, am about midway-ish through Act 2, and have only Long Rested twice - I'm not trying to speedrun or anything, I'm just cycling through my companions and I just... haven't needed to. But should I be consciously trying to rest more, just to see more camp related things? Are they blocked off after a certain point? There doesn't seem to be any consequence to resting more (at least as far as I know), other than using some of the plentiful amount of provisions. Is this something I should be thinking about if I want to see more stuff?

The game often waits until a long rest to throw certain cutscenes at you, otherwise you're fine. Also should be no harm in doing plenty of long rests as long as you don't have any quests active where timing is critical.
Certain things in Camp can only happen in certain acts. Long Resting only twice by Act 2 seems like nowhere near enough normally - you would have long since run out of spell slots and health and the like unless you're avoiding a lot of fights, playing on easy difficulty, or meta-gaming to an absurd degree to spread out wear among your party.

I personally did a long rest maybe 20 times in total in my 67 hour play-through, less than 10 per act. I sometimes didn't get certain scenes until I had Long Rested multiple times in a zone, so I suspect that you'll want to Long Rest at least every couple of hours of real time if you want to see everything. Just make sure you don't Long Rest too much when you are actively in a situation where time is of the essence - there are some timed missions which Long Rests can fail (relating largely to things like rescuing people who are imminently going to die).

Most of the stuff you'll see in Long Rests is related to your companion quests, so if you care about those you'll want to Long Rest a bit more often. But you also can have things happen like Scratch or the Owlbear showing up after you saved them, or so on.

Well, there are certain cutscenes that only play on long rests, but if you don't need to long rest, then don't feel like you have to. The game will force you to long rest on occasion in order to get to that story content, so I wouldn't be overly worried about it. If your primary concern is you want to see absolutely everything, then yeah, you should long rest more often. There's more than enough provisions in the game to long rest very often--I long rested fairly frequently and didn't come close to using up all my provisions.

You don't have to, but most of the interactions are tied to it. It's an extra incentive to want to rest but not a necessity.

Why would you long rest so few times? Are you deliberately trying to have a bad time?
