It's not that they don't know, it's that they don't care.
Modern games, especially "service" games with microtransactions, have perverse incentives for the developers - the way to make the most money is not to make the best game, but to make the most addictive game which is actually very different.
Blizzard has long since ceased to try to make games as fun as they can be, instead focusing on making games as profitable as they can be.

i think that BG3 is still more playable than most AAA titles in recent years.

They have three things going for them:
1. The legacy Blizzard North left for the company.
2. The art/music teams are, and always have been, solid.
3. The core mechanics of their games are always fluid and responsive, movement, etc.
they're just hardcore fanboys trying to defend a company thats been treating em badly for over a decade.
