Are some people not pickpocketable?

I just made it to Helsik's store. I gave her a VERY generous amount to "persuade her". I felt buyers remorse though so I tried to steal it back. My modifiers are higher than it takes to pickpocket her but I still fail instantly. Are some people nonpickpocketable? I also noticed a very powerful item was missing from my main character's inventory. An item that is not supposed to be able to be removed from my character. Nyrulna . It is just gone. I didn't sell it but it's gone. I am super upset cause that item was really cool.

You can, i steal her grimoire, her ritual prep thingy, the money, and all her rare magic item, it's just very difficult DC, savescumming is your friend here, and in wyrm's crossing there's wood elf that can give you rapture buff (1d6 bonus to attack rolls, saving throw, ability checks) get it and stack it with guidance
