Dual clerics with Shadowheart can actually be incredibly strong, it's what I used for the first half of act 1 on my first character and Inflict Wounds alone paid dividends in rougher encounters. Make good use of Shield of Faith and buffs like it, higher AC is amazing.
For your undecided slot, you can pick anyone since you're able to respec any character into any class, a caster ideally so you don't end up with a posse of meatheads. But if you're against using the respec then Gale would be a solid pick in terms of balancing the party. That or a hireling.
Monk + cleric would probably be a very mobile melee fighter without armor, doing a bit of casting on the side for utility. Shadow monk may be a nice flavor option here. Both benefit a lot from high wisdom, so could definitely be interesting a sort of "temple monk" build.
Ranger + cleric can work in a similar fashion, but probably with a higher focus on ranged damage. I'd recommend starting with ranger (for the equipment proficiencies) until 5 for the extra attack and then going full cleric. Gloomstalker is very strong and I guess has some interesting flavor with your character as well.
Druid + cleric is a bit low on damage and super support / utility heavy. You'll have to decide whether you'd want to lean more into cleric or druid, because otherwise you'll miss out on the high level spells. You can't cast while in wildshape, so there is some anti-synergy here.
Fighter + cleric is good if you want a very tanky caster. Action surge is always super strong and the extra attack and (if you're going there) extra ASI can help as well. I'd recommend starting with the fighter and going into cleric at the level you've gotten out of fighter what you want, so you'll get all gear proficiencies. Battle master would make most sense here I think.
Rogue + cleric is not as common, but can definitely work. Think of a magical temple assassin. Thief would probably be of most use here, the extra bonus action is just that powerful and a cleric can put them to good use as well. You'll need high dex and wisdom for this to work, so your ability points need a good distribution, aka dump int and str. You'll need to choose whether you want more sneak attack damage or more casting though, since both classes do scale well with levels.
Dang, i never thought of Monk class. Seems fitting!
