parasite not appearing in inventory

killed the goblin priestess, took the parasite from her inventory, but it did not appear in mine, nor was there an increase in Illithid powers, it showed one before and remained at one after looting her inventory.

That is literally the correct answer.

Once you unlock illithid powers you no longer receive an item from picking up a parasite, instead the number of parasites available in the illithid menu (press "B") increases.

well it did not, illithid powers showed one before i looted her inventory and still showed one after looting her inventory as i explained in my original post

Make sure your controlling the right character.

I had a similar issue before, i used my tadpole to gain a power, then defeated a boss, looted inventory and then went to apply tadpole, just to find that i had no powers learned and i thought my game glitched, then i realized that i wasnt controlling my main character as each character have their own tree.

Yeah, it happened to me in my last playthrough, I have several of those "pots" in my inv but cannot seem to be able to activate them. I killed the gobling bosses (all but Minthara, who I KOed to hire later). I'd really like to be able to unbug this, played a lo before noticing this happened.

Nope, it's a bug, you complete the dialog that usually enable it, it doesn't unlock but also doesn't put the special tadpole you can use to unlock the system in your inventory as if you didn't accept to be a half illithid.
