Does using non-lethal attacks influence the story in any way?
Is a non-lethal approach ever acknowledged by anyone? Do characters you fought but did not kill appear again, later on? Or is a non-lethal approach technically the same as killing everyone, in terms of the story?

Example: I defeated the NPCs guarding the old hag non-lethally but after the fight with the hag, nothing happened with them. Might as well have just killed them.

Maybe. I know when I KO'd that girl's brothers on the Hag Questline. It says it's ok I only knocked them out. But she still freaks out like they are dead.

So maybe?

so far every time I've used non-lethal it's been treated as if they were dead in dialoges.
It might be easier on paladin oats though ( untested )

Generally, no.

It comes up a few times where you can knock out an enemy for a specific reason. But otherwise like if you nonlethal'ed the druid grove, pretty sure they all count as dead.

Unfortunately not. A downed character is considered "dead" and will be removed. It only helps e.g. paladins to not break their oaths (by not killing "innocents")

Also it's can be disadvantegous for loot - a downed character sometimes doesn't have all the possible loot available. Killing him with an arrow after emptying the pockets might reveal new items. Also, ranged weapons always kill, no matter the non-lethal setting.

Depends on the NPC. Minthara can be knocked out and found later in Act 2 for example. SO far I know of her and 1 more NPC in Baldurs Gate that have interesting consequences for knocking them out, but there might be more.

Non-lethal is not implemented in the game. Just one more of Larian's long list of "look! we have so many different options!" but everyone still treats you as a murderer.

I did it on recruitable character as well, not Minthara though. And I broke someone out of prison by knocking out one of the patrolling guards.

Uff. This is bad.
It is weird enough that they would resort to killing you.. or you killing them.

It makes much more sense in the context to just beat them up.

Not having a proper reaction ingame for such action is a serious oversight.

I WAS ABOUT TO SAY, I knocked that chick out in my first run and she never came by,

Mince is the only one that has a scripted event tied with it.

Really theres a scripted event tied to it?
Killing her she still shows up in the city, And bringing her low she gives you her hair and runs.

If you are playing as Dark Urge there is an important NPC in Act I that you are forced to kill in a cutscene while you long rest but if you knock her out non lethaly before the rest a new NPC unique to the Dark Urge appears in the camp instead and the knocked NPC is still alive the next day, this is important because she can give you a unique quest in Act II is she survives in Act I.
