When I add a cleric skill to my mage when leveling up, it's a subclass for me!
It is not better/worse by itself(there may be exceptions), the Game tells you that, because you firstly won't get potential high level features of a class anymore you will change one kind of power for another. Nothing more nothing less. You don't miss out on anything, you choose your priorities.
Edit: to clarify - Subclass is a Specialization of One Class, A Branch. Like making your Rogue an Assassin or a Thief. Or choosing a Domain of a Cleric. Some get their Subclass at Lvl 1, some at Lvl 3.
Multiclass is when you invest Levels into another Class. For example if you start as a Fighter and then add levels of Barbarian or starting as a Paladin and then you add Levels of Sorcerer.
It's a whole different Thing.

I have a 5/5 Gloomstalker Assassin rogue right now, a very popular and strong class combo. You have insane ranged damage, multiple attacks every round, you're always first in the turn order too. I plan on making my last two levels fighter for power surge for more attacks:3
