Fast forwarding time so you don't understand all the damage you just took or why you died isn't really QOL, this isn't fire emblem either where you can full heal on your turn, and also it's all your turns then all their turns or something crazy so it doesn't make sense to just skip combat turns the way initiative works.
Honestly the system is fine as it is, why do so many people wanna skip thru the information gathering process? It's important to find out the priority targets for your strategy.
Alt tabbing and waiting 5 minutes through the ai... thinking.... thinking.... thinking... then moving... attacking.... moving....

This could theoretically work but I imagine it isn't as simple to code as you make it sound because the game wasn't designed to function like that. At that point though your just removing attack animations, but again this is a feature in a game like fire emblem where each fight is a cuscene rather and you skip the scene part, where BG3 has to render out all of that stuff.
Probably not impossible but I can't imagine a small undertaking at this point to throw in.
Some people like watching drawn out animations and sit there watching silently as their enemy makes moves unimpeded. Bit like xcom fans. They love watching 1 guy take 30 seconds to move and then fire 5 bullets which may or may not hit.

Waaay uninterested in this style of game.
Imagine standing there facing an attacker and then magic dice are rolled and they get to hit you in the face with a baseball bat but you, you have to stand there and take it like the champion you are. POW, right in the mouth, teeth all smashed to smitheries, jaw hanging off your skull, still standing tho. Then it’s your turn and you get to punch them with your “gloves of accuracy” and then still miraculously miss because the dice said so.
