As a Cleric, you'll have at least medium armor, possibly heavy, so UD is useless to you and that leaves stuns.
That means you're going at least 5 levels in Monk or it's completely pointless. But you get both Extra Attack AND Stunning Strike, as well as 5 Ki points that recharge on short rests.
The real question is do you push Monk to 8th level and then dip 4 levels into Cleric so you get all three feats, or do you put 7 levels into Cleric to get as many spell slots as you can?
The subclassez I don't think matter quite as much as the base class abilities here, so just choose whatever feels thematically the most fun to you.
I'd probably go 5/7 Four Elements Monk/Tempest Cleric so I could get Call Lightning and Stunning Strike and I would equip Hamarhraft or that other hammer that knocks enemies back. Although I could spend Ki to upcast Call Lightning, I'm mostly reserving that for Stunning Strikes.
Have another character Haste me and I can stun 2x per turn also Call Lightning.
What we do know is it seems to be a lot better so far. Apparently monk proficiencies are changing and now anything you're proficient in can be a monk weapon. They also seem more powerful and doesn't struggle in damage/ki like it's 5e counterpart, so multiclassing might be more viable now.
If the Shadow Blade spell is in the game you should be able to make this your Pact Weapon (however Larian implements it), which ought to allow to deal at least 3d8 +CHA 2x per turn (extra attack) or more if Hasted, and even more if the Blade cantrips are in the game...
