Plausible? Everything is plausible. Contained, non-competitive experiences like this generally aren't built around their min/maxers. Letting them play how they want can't hurt the wider playerbase at large. Furthermore their will also be the option to respec and select a difficulty in the full game.
Probable? Well you probably want to know why you are doing it from a gameplay standpoint before doing it. From a roleplay standpoint, paladins can already be pretty ranger-like for the simple fact that they have proficiency with bows, particularly Oath of the Ancients paladins who are considered to be a bit more in tune with nature.
If it comes down to efficiency, I feel like paladin and ranger have far too much overlap in terms of the skill selection that they gain. Go to fextra and compare OotA paladins skills to either of the two ranger subclasses currently available. There must be at least 6 skills in there that either class can get without multiclassing. Healing skills, protection from poison, speak with animals etc. But pets/summons from beast master might have some good utility.
